New Haven style pizza is legendary. I went to Frank Pepe Pizzeria Napoletana, considered to have the best pizza in the United States, and to Alforno, which serves my personal favorite pizza. However, many consider the three other pizza restaurants in New Haven in the same tier as Pepe’s: BAR, Sally’s Apizza, and Modern Apizza. On March 28, I visited Modern Apizza with some friends.

When I arrived with my friend Ms. G, our friend Mr. V was already waiting. He had gone ahead and ordered a glass of wine and a salad, items he said he needed after a hard day at work. Although I do not eat salads, Mr. V said that the salad met his expectations, and Ms. G commented on how cute the wine glass was.

I asked the waiter what pizzas best represented Modern Apizza. She recommended the clam pizza, the margarita pizza, and the “Italian Bomb” pizza. We decided to pass on the clam pizza, as I had eaten it at Pepe’s Pizza quite recently. The margarita pizza, she told us, was different than their competitors’ due to their use of fresh mozzarella.

We ended up going with the “Italian Bomb” pizza. This consisted of bacon, sausage, pepperoni, mushrooms, onions, pepper, garlic, and tomato sauce. Mr. V, however, does not eat sausage, so we ordered ¼ of the pizza without it. That the restaurant allows people to customize their pizzas in fourths was a surprise to be sure, but a welcome one.

When the pizza arrived, we all dug in. It was a solid New Haven style pizza overall, but it suffered from too many salty toppings. While eating, we managed to finish the pitcher of water at our table rapidly. The pie itself seemed a bit doughy, and it evidently had not been sufficiently cooked.

Modern Apizza is a legendary pizza restaurant in New Haven, but perhaps the current management is not allowing it to live up to its hype. It has a strong history and strong potential, but we were a little disappointed with the result. The pizza was okay at best, but for such an influential representation of New Haven style pizza, that’s not good enough.
